Sourfruit Tarts
Sourfruit Tart is an Utaru dish from the video game Horizon: Forbidden West. The game describes the dish as a baked treat made with slightly sweet and tart berries and sourfruit juice.
For my version of the dish, we are using blueberries and lemon juice to make a delicious, sweet, and tangy tart.
Ingredients
Tart Shells
1 ½ cups all purpose flour
⅓ cup powdered sugar
¼ tsp kosher salt
½ cup (1 stick) unsalted cold butter, cubed
1 egg yolk
2 tbsp water
Lemon zest from 1 lemon
Filling
2 cups blueberries
⅓ cup sugar
Lemon juice from 1 lemon
Walkthrough
Cube your butter and put it back in the fridge so that it stays as cold as possible.
In the bowl of a stand mixer, combine your flour, sugar, and salt.
Add the cubed butter.
Mix everything together using the paddle attachment on low speed, gradually increasing to medium. You’ll know you are done when you’ve got a coarse meal texture.
Add the egg yolk and some of the water. Mix on low to combine.
Keep adding water gradually until the dough gathers into a ball and starts to pull away from the sides of the bowl. You may need to use more or less water depending on humidity and other factors.
Wrap the dough in plastic wrap and let it chill in the fridge for 1 hour.
While it’s chilling, go ahead and wash your blueberries and lemon.
Before you juice the lemon for the filling, you’ll want to zest it and set aside the zest for later use. Make sure to cover it so it does not dry out.
Once your berries are dry (you don’t want any excess water), add the sugar and lemon juice. Toss to combine.
Preheat the oven to 425.
When the dough is cold, divide it into 6 (you might be able to squeeze out 8) portions.
Roll them out and fit them into your tart pans. I like tart pans with removable bottoms. When rolling out the dough, aim for about ⅛ of an inch of thickness. Tart crusts should be nice and thin.
Once you have your tart shells done, gently add some lemon zest to the base of your tart.
Finally, add 1 layer of your prettiest blueberries.
Bake at 425 for about 25 - 30 minutes or when the tart shells begin to brown.
Let them cool for about 5 minutes, then remove them from the tart pans and enjoy!
