Lembas Bread

The Lord of the Rings is very special to me and is probably my favorite fandom. While I’m not a baker, I really wanted to take a stab at Lembas Bread. I wanted to focus on highlighting the golden color and the warm feeling you would get if you ate some.

I’m using a sweet yeast bread as the base recipe and I’ve added ginger and cardamom to give it that warming quality.

Ingredients 

  • ½ cup sugar

  • ½ tsp of salt 

  • 1½ packages of active dry yeast 

  • 3½ - 4½ cups of flour

  • 1 cup of milk 

  • ½ cup butter 

  • 1 egg

  • 1 egg yolk 

  • 1/4 cup diced candied / crystalized ginger 

  • 1 tsp water

  • 1 tsp cardamom

Walkthrough 

  1. In a large bowl, combine sugar, salt, yeast, cardamom, and 1 cup of flour.

  2. In a saucepan over low heat, slowly heat milk and butter until very warm (120 - 130 degrees). 

  3. With a mixer at low speed gradually beat liquid into dry ingredients. 

  4. Increase speed to medium and beat for 2 more minutes, occasionally scraping the bowl with a rubber spatula. 

  5. Beat in 1 egg and 1 cup of flour; continually beating for 2 more minutes; occasionally scraping bowl. 

  6. With a spoon, stir in enough additional flour (about 2 cups) to make a soft dough. 

  7. Turn dough onto lightly floured surface; knead until smooth and elastic for about 10 minutes. Shape into a ball. 

  8. Turn into a greased bowl (so that the top gets greased). Cover; let rise in a warm place until the dough is doubled (about 1 hour). 

  9. Finely chop up the ginger. 

  10. Grease a 9 x 13 in baking dish. 

  11. When the dough has doubled, punch down the dough. 

  12. Knead the ginger into the dough. 

  13. Divide dough into 12 pieces and shape into balls. Place evenly in the dish. 

  14. Cover with a towel; let rise in a warm place until doubled (about 1 hour). 

  15. Preheat the oven to 350. 

  16. In a small bowl combine the egg yolk with the water. Brush buns with the mixture. 

  17. Bake buns for about 25 minutes or until brown.
