Bruce’s Silver Dollar Pancakes
This recipe comes from Season 1, Episode 1 of She-Hulk: Attorney at Law. In this episode, Jenn becomes the She-Hulk and is understandably freaking out about it. Bruce tries to calm her down by feeding her some silver dollar pancakes. Since Bruce lives on a tropical island, I decided to give the pancakes a tropical twist.
Ingredients
Pancakes:
1 ½ cups AP flour
2 tbsp granulated sugar
1 tbsp light brown sugar
1 tsp baking powder
½ tsp baking soda
½ tsp kosher salt
2 large eggs
1 ½ cups buttermilk plus 3 tablespoons
3 tablespoons melted butter (make sure its cooled)
1 tsp vanilla extract
pineapple chunks for garnish (optional)
Sauce:
2 cups pineapple
1 ½ cups granulated sugar
1 tsp lemon zest
1 - 2 tsps fresh squeezed lemon juice
2 cups water
Walkthrough
Let’s start with the pancake mix. The first thing you’ll want to do is melt the butter so that it has ample time to cool down. The butter needs to be cool enough that it doesn’t cook any of the other wet ingredients.
Whisk together the flour, granulated sugar, light brown sugar, baking powder, baking soda, and salt into a medium bowl.
In a separate bowl, mix together the eggs, buttermilk, vanilla, and cooled butter.
Add the wet ingredients into the dry ingredients, making sure to not overmix. Set it aside for at least 30 minutes.
While the batter is resting, in a saucepan, combine the pineapple, sugar, lemon zest, lemon juice and water over medium-high heat.
Once it begins to boil, lower the heat and let it simmer for 15 minutes, making sure to stir occasionally.
Carefully pour the ingredients into a blender, and blend until you have a smooth consistency.
Add the sauce back to your saucepan and let the sauce reduce over low heat. The longer it reduces the sweeter it will get, so taste it periodically and take it off the heat once it tastes good to you.
Now it’s back to the pancakes. Your first batch of pancakes will help you figure out how hot your pan should be. I recommend a medium heat as a good starting point.
Add your batter to your pan or griddle. Each pancake should use roughly 2 tbsp of batter. Cook until bubbles appear on the surface and the bottom is golden brown. (If the bottom is burnt, lower your heat. If the bottom is really pale, increase your heat). Flip the pancakes over and cook until the bottom is golden brown (about 1-2 minutes).
Top the pancakes with the pineapple sauce and the extra pineapple chunks.
